유아 식생활교육 연구동향 및 방향성 탐색 (Research Trends and Directions of Children’s Dietary Life Education)

초록

본 연구는 2014년부터 2018년까지 수행된 유아 식생활 교육과 관련된 학술논문 64편을 분석하여 연구대상, 연구자 동향 분석 및 연구 주제별 식생활 연구동향을 파악하고, 앞으로 유아 식생활 교육의 방향을 제시하고자 하였다. 연구 대상은 유아를 대상으로 하는 연구 논문이 가장 많았으며, 유아와 부모, 유아와 교사, 교사와 부모 등을 혼합하여 연구한 논문이 많아지고 있었다. 연구자의 전공은 식품영양 전공자와 유아교육 전공자가 대부분이었다. 연구 주제에 따른 식생활교육 연구 동향은 유아 식생활 실태가 26편(40.6%)으로 가장 많았으며, 유아 식생활 교육 인식 및 실시현황이 19편(29.7%), 유아 식생활교육 프로그램개발이 14편(21.9%), 유아 식생활교육 방향이 5편(7.8%) 이었다. 유아식생활 실태에 관한 연구 내용은 식습관, 영양지식, 영양지식과 식습관 동시 연구 순이었으며, 유아 식생활교육 인식 및 실시현황은 대부분 식생활 전반의 교육에 대한 연구보다 영양교육의 현황이나 내용, 운영에 대한 연구가 대부분을 차지하고 있었다. 유아 식생활교육 요구도 조사에서 교육의 대상은 유아보다는 유아교사를 대상으로 한 논문이 가장 많았고, 학부모를 대상으로 하는 연구가 그 다음 순서였다. 교육방법에 따른 유아 식생활교육 프로그램 개발한 논문은 유아 식생활교육 프로그램 개발 후 효과평가를 본 논문이 가장 많았으며, 식생활교육 프로그램 교육이 유아의 식생활에 미치는 영향, 식생활교육 프로그램 개발 순서였다.

영어초록

This study analyzed 64 research papers related to dietary life education for children conducted between 2014 and 2018 to identify trends in research subjects, researcher trends, and dietary life research trends, and suggested the direction of dietary life education for children in future. Most research papers belong to research on children, and the number of papers with a mixture of children and parents, children and teachers, and teachers and parents is increased. Majors of most of the researchers were food and nutrition and early childhood education majors. In terms of the trend of dietary life education research by research subject, research papers on children’s dietary life reality included 26 papers (40.6%), followed by recognition and implementation of child dietary life education 19 (29.7%), development of child dietary life education program 14 (21.9%), and child dietary life education 5 (7.8%) in that order. In terms of research on dietary life of children, there were studies that were actively performed on eating habits, followed by nutrition knowledge, and both nutrition knowledge and eating habits in that order. Most of the perceptions and implementations of early childhood dietary life education were mostly about the current status, content, and operation of nutrition education, rather than the education on overall dietary life. In the survey of dietary life education needs for children, the subjects of education were the ones with early childhood teachers rather than children, followed by parents. In terms of the papers that developed dietary life education program for children according to the education method, there were mostly the papers which explored the effect evaluation after the development of dietary life education program for children. And they were in the order of the effect of dietary life education program education on the dietary life of children, and the dietary life education program development.
