‘PAPRIKA’DATE:NAME:CLASS:Spices are important ingredients of cooking, similar to a supporting actor in movies. Ages ago ancient humans realized that food tasted better with spices. From there on, we’ve used spices from cooking to food preservation. One spice in particular that stands among other spices is Paprika. In this essay, I will give a history about this exquisite spice, its use and its influence from its beginning to nowadays, and everyday’s cooking.Paprika, as a member of the capsicum family, is a fine powder ground from very mild and sweet varieties of bell pepper. The texture is finer and milder than chili pepper powder or cayenne. The mild flavored peppers had been introduced to Hungary by Turks in the 19th century. The Hungarian dried and powdered the peppers and used them in there food recipes such as goulash and paprikash. It’s also used in Austrian, Spanish and Portuguese cooking for soups, stews, casseroles and vegetables. Paprika is also used as a garnish for color.Nowadays, Paprika is such an important ingredient in blended spices that it has become the fourth most consumed spice product in the world. It is widely used as a base ingredient in barbecue rubs, processed foods, and seasoned salt.Paprika is indigenous to the Western Hemisphere. The pepper is widely grown and takes on a slightly different flavor depending on soil and climatic conditions. Paprika can be anything from mild to pungent. When buying, you should check the label, usually describing it as either sweet or hot. Normally produced in Hungary should be the best quality with no bitter aftertaste. The great pepper growing areas are around Kalocsa and Szeged in Hungary. In March, the pepper seeds are put in water, and then transferred to greenhouse beds. Seven weeks later, in May, the small pepper shrubs are re-planted in the open fields. Harvesting starts in September. You should know how and when to use Paprika in cooking. When adding paprika to other ingredients either add it with liquid or remove the pan from the heat first. And do not use it with the natural sugar. There are many reasons why I chose paprika. It is similar to Korean spices like ‘red pepper powder’. Also, this spice is very interesting in cooking and garnish. Through writing this essay, I have learned about paprika and I want to learn about other spices.PAGE PAGE - 2 -
METHOD OF HEAT TRANSFER: HOW TO COOK THE PERFECT STEAKSince early humans discovered fire, this source of energy has had many uses: protection from the elements, heating, warfare, cooking. In this paper, I’m going to talk about Heat, the energy from fire and its use in cooking, specifically with beef or steak. The history and methods of heat transfer for cooking. I will demonstrate the distinctions in beef and steak. And later, I will associate Heat and beef to cook the perfect steak.According to dictionaries, heat transfer is the thermal energy in transit due to a temperature difference. As early as 19th century, Joseph Fourier (1768-1830) said that “Heat, like gravity, penetrates every substance of the universe; its rays occupy all parts of space. The theory of heat will hereafter form one of the most important branches of general physics.”In our environment, heat transfer normally moves from a warmer object to a cooler object. There are three types of heat transfer: conduction, convection, and radiation. I am going to briefly define each:Conduction is when heat moves from one object to another at contact, directly. —For example, if you leave a metal ladle in your hot soup pot, the ladle will become hot. And we usually use our side towels for carrying pots and pans in a class, because the handles become hot, when we cooking with pot or pan. Conduction works very well with metals like: copper, steel, silver and iron, but it works poorly in air or gases.Convection is transfer of heat by movement of air, steam or liquids in circulation. Hot air or liquid rises up through the surrounding cooler one, while cooler one sinks to the bottom —For example, I used to go to the sauna in Korea. When I come into the sauna room, the upper side is very hot and the bottom is warm.Radiation is transfer of energy by electromagnetic waves. When a wave comes into contact with an object, the energy is transferred to the object as heat. It is the only one that can transfer even in empty space.—For example, when I was young, I used to play burning black paper with magnifier outside. The sun’s heat can transfer to earth from millions of miles away.Typically, there are three elements involved when cooking: fire, a heat transfer medium (oil, water, air, a pan, etc.), and the food itself.Firstly, I think almost food is generally transfers heat to the food by conduction through the medium (oil, water, air). Grilling steak is the most typically cooking method within conduction. If you cut a grilled steak, you can see the color of gradation from outside to inside.Convection is not to heat the food directly, but it helps heating efficiently and faster. Deep-frying, boiling, and convection oven cooking are good examples.Lastly, consider radiation. Infrared like broiling and microwave cooking are used in the kitchen as a radiation. The best way to cook a steak is definitely grilling it. Everything matters while grilling a steak. Most steaks require about 8-10 minutes on the barbeque. The time will depend on the degree of doneness required.Tender cuts such as sirloin, tenderloin, rib eyecan also be broiled. Broiling is done in the oven with no liquids used. It gives a different flavor from grilling as in an oven the heat surrounds the meat from all sides. Less tender cuts can also be broiled provided they are marinated earlier. If the cut of beef is bigger, then it is ideal for roasting. Roasting is also a dry heat cooking method that uses no liquid and no cover. Tender cuts roast better and they are to be sliced before serving.Tough cuts of beef such as chuck, round, flank, briskets and blade are usually braised. Braising is a moist-heat cooking method done with a little amount of liquid in an oven with a closed lid. It is a slow process as it slowly allows the meat to tenderize.
USING CELL PHONESIN RESTAURANTSCLASS :NAME :DATE :『One woman who looks like a business woman is talking on the phone in a gorgeous restaurant. She looks very busy and pressing. A waiter came and asked her to be quiet or to stop talking on the phone. But she is still talking on the phone. What is worse? The signal on her phone was terrible. That is why she can not here well and her voice is getting louder; at the same moment one little kid sitting on the next table is shouting and running in the restaurant. After all, the same waiter comes to the woman, and asks her to get out of the restaurant』This situation was a scene in the TV show “Sex and City” that I have seen before. I thought about this thesis at that time. That is why I still remember the situation. Do you think that she deserves to be kicked out? If so, what about the kid and his mother? I do not think that is fair. She also was interrupted by the kid. What if it was a really important call for her, Such as a huge business contract or a family emergency? For example, the main actress ‘Andy’ played by Anne Hathaway in the movie “Devil wears Prada (2006)”, she was always busy on the phone, and also she had to answer the phone anytime, anywhere, any situations. If you insist on a ban using cell phones in restaurants, it is the same as to deprive people of their rights. I agree that being too loud on a cell phone in public areas could be bothersome to many people. However, people also do conversations with their friends, family, or clients in restaurants. I do not know what is different from talking on the phone. Restaurants are not just places for eating. If there should be a ban on cell phones, why not banning people that talk too loud as well? Why not banning ill bannered kids? Where will all this end?One more thing about this debate is manner or culture. The culprit is not the cell phone itself. It is how people choose to use it, I may be in a restaurant eating and talking on my cell phone without disturbing anyone. Tell me why there should be a ban in my case? Maybe restaurant owners should go to people that are disturbing other customers with their loud conversations. In Japan, people generally do not talk on their cell phone while in a restaurant or public places because, culturally, they do not wish to bother other people. There are no bans, it is simply a choice. In the end, people should only be educated about “Restaurant Etiquettes” we should not impose bans on devices without educating the population. In conclusion, people have their need, a cell phone in our modern two thousand and eight world is a necessity. Instead of banning cell phones in restaurant, why not educating people about how to use their cell phones in public, like restaurants. I strongly disagree with a ban on cell phones in restaurants because I believe my own usage of a cell phone in a restaurant is not an annoyance to other people.
CHOLESTEROLESSAY 3-CAUSE AND EFFECT-CLASS :NAME :DATE :According to dictionaries “Cholesterol is a substance that exists in the fat” It is well known for one of the most caused of arteriosclerosis cases. So far, advertisers and news media have concentrated on the supposed danger from high levels of blood cholesterol. The dangers of low blood cholesterol levels have largely been ignored. That is why people are busy trying to lower cholesterol level only. But Cholesterol is not just bad for our health; it can be beneficial as well. Cholesterol plays an important role in building cell membranes and sex hormones. As mentioned above, cholesterol exactly corresponds with aphorism “Too much is as bad as too little”. We need to know about cholesterol correctly. I will give information about ‘High Cholesterol’ and ‘Low Cholesterol’, good cholesterol (HDL) and bad cholesterol (LDL).Heart attacks are the number one killer of men and women world-wide.High cholesterol level is caused by heart disease or heart attack. Most doctors suggest cholesterol levels should stay under 200 mg/dl.A low cholesterol level, however, is not a guarantee of good heart health. Too low can cause mental troubles such as hypochondria, and generative functions troubles such as a sexual dysfunction. You can find both sides of cholesterol in our body system. LDL (Low Density Lipoprotein) cholesterol, which is directly linked to heart disease, a “Bad Cholesterol”, and HDL (High Density Lipoprotein) cholesterol, which is protective, a “Good Cholesterol”. The relative level of HDL to LDL is more important than total cholesterol.Low-density lipoprotein (LDL) is the major carrier of cholesterol in the blood. Too much LDL will build up with other substances along the artery walls that feed the heart and brain. They combine to form plaque, hard, thick deposits that clog the arteries. This leads to a condition called atherosclerosis.HDL cholesterol carries cholesterol back from the arteries, to the liver, where it is either excreted or re-used. As a result, HDL is responsible for removing excess cholesterol from plaques (accumulations and swellings within the artery walls), thus slowing their growth. So it is important to keep your balance between HDL and LDL cholesterol.A recent survey found many people would like to purchase food products that are proven to help lower cholesterol, but most do not know which food can do so.Now, I am going to talk about which food can help keeping a good cholesterol balance. It is necessary, for expanding HDL level, to ingest vegetable fats. But it can be harmful to health if you take too much of it, because the vegetable fats can be transferred into saturated fats. Saturated fats can contribute to the buildup of plaque inside arteries and raise blood cholesterol levels. Research shows cooking with olive oil can help reduce blood cholesterol. Eating fish has been reported to increase HDL cholesterol on the other hand. Some report found that dietary fiber helps to lower the level of cholesterol and blood sugar, which in the end reduces the risk of heart disease and diabetes. And also soy products, such as tofu and miso, reduce both total and LDL cholesterol level. In addition, with exercise and quitting smoking, protective HDL cholesterol can be increased and LDL cholesterol is typically lowered. With people getting older, less movement, less activities so LDL tends to increase. They need to do medical testing for cholesterol. Even young people, who have a hypertension or diabetes and smoke a lot, should do too.Cholesterol, is dangerous if you take too much or too little, worse in a complicated system. The best way to keep your health is to take good cholesterols from dietary food, take a medical testing of cholesterol as a schedule, and regular exercise. If your cholesterol level is too high or low level, you should see a doctor and take steps to control your blood pressure and cholesterol levels. Keep your health when you are healthy!
