종가음식의 혈연공동체성 변화와 전승 과제 (Changes in Blood-Related Communality and Transmission Tasks of Head Family Food)

초록

오늘날 종가음식이 세인들의 주목을 받는 이유는 오래된 전통음식에 대한 기대가 크고, 귀감이 되는 역사적 인물의 삶이나 사상과 관련된 음식에 대한 기대도 크기 때문이다. 일반적으로 종가에서는 봉제사와 접빈객을 하기 위한 음식의 조리법을 중요하게 여겼고, 한편으로 음식을 어떤 상황에서 어떻게 배분하고 누구와 어떻게 먹을 것인가 하는 방식을 소중하게 인식하였다. 오늘날 종가음식으로 명명되는 종가의 전통음식은 조상을 섬기는 음식, 손님을 환대하는 음식, 조상의 정신과 취향을 담고 있는 음식, 나눔과 베풂의 음식, 정성과 예법을 중시하는 음식, 지역마다 종가마다 차이 있는 음식, 고춧가루를 쓰지 않는 음식, 오랜 역사와 전통을 가진 음식이라는 성향이 두드러진다.
현대사회에서는 종가문화의 전승력이 약화되면서 종가음식은 차세대로 순조롭게 전승되지 못하는 상황에 처했다. 이는 유교문화의 퇴조와 더불어 혈연공동체를 기반으로 하는 종가문화의 약화, 농촌 인구의 도시유출과 같은 사회문화 변동에 따른 것이다. 그리하여 종가음식 전승주체인 종부와 차종부(次宗婦) 사이의 전승관계가 해체되고, 종가음식 조리에 풍부한 경험을 가진 문중 여성들의 수도 급감하여 결과적으로 종가음식의 혈연공동체성이 약화되기에 이르렀다. 이 상황에서 연구자들의 종가음식에 대한 관심, 매스컴의 영향, 가족공동체 문화 약화 등으로 인하여 지역의 종가와 종부들은 종가음식을 새롭게 발견하여 전승하려고 노력하기 시작했다. 종가음식의 전승이 재맥락화 되고, 종가음식의 전통이 재구성되고 있다.
종가음식도 그 나름의 역사․문화적 의미가 있으므로 한 갈래의 음식으로 전승되도록 할 필요가 있다. 이를 위해서는 노종부(老宗婦)가 스스로 자신의 조리법을 정리하여 자료화할 수 있도록 지원하고, 종가의 음식문화에 대하여 체계적인 학술조사와 연구를 해야 한다. 일반인들이 종가음식에 거는 기대는 종가에서 느낄 수 있는 인문정신과 문화적 가치에서 비롯되는 것이므로, 어떤 인물의 기념할만한 정신이 돋보이는 음식과 개별 종가에서 역사․문화적 의미가 큰 음식을 우선적으로 전승하고 체험할 수 있도록 하는 것이 적절하다.
종가음식을 일정하게라도 보전하기 위해서는 종가마다의 음식조리와 나눔의 개성을 살려야 하며, 종가마다의 예법과 문화에 따라 음식을 만들어 먹을 수 있도록 하는 것이 바람직하다. 한편 종가의 특색 있는 음식이지만 단절된 경우에는 재현을 해서라도 전승할 필요가 있고, 지속가능한 가치, 미래지향적 가치, 공생적 가치를 가진 종가음식을 정립하여 전승하고, 여러 사람들이 차별 없이 종가음식을 맛볼 수 있도록 해야 좋을 것이다.

영어초록

Head family food has recently been receiving the attention of the public because there are high expectations for old traditional food and for food related to the lives or thoughts of historical figures who are considered to be role models. Generally, head families considered food preparation methods for ancestral rites and guests to be important and perceived food distribution methods in different situations along with food eating methods and dining company to be of value. The traditional food of head families, which is now referred to as head family food, shows cultural identities as food that gives service to ancestors, food that extends hospitality to guests, food that embraces the spirit and tastes of ancestors, food of sharing and kindness, food that places importance on sincerity and decorum, food that differs by region and by head family, food that does not use red pepper powder, and food that has a long period of history and tradition.
As the transmission power of head family culture increasingly weakens in modern society, head family food is not being readily passed down to following generations. This is due to social and cultural changes such as rural population outflow, the decline of Confucian culture, and the weakening of head family culture based on blood-related communities. Because of this, the intergenerational relationship between the wife of the eldest son of the head family, who is the subject of tradition in relation to head family food, and the wives of the eldest sons of other families is dissolving and the number of family women with abundant experience in head family food preparation is rapidly decreasing, eventually leading to the weakening of blood-related communality with regard to head family food. With such situations, head families and the wives of the eldest sons in those families have begun to make efforts to newly discover and pass down traditions of head family food following the interest of researchers in head family food, the effects of the media, and the reactions to the weakening of the family community culture. As the tradition of head family food is becoming re-contextualized, the tradition of head family food is being reconstructed.
As head family food has its own historical and cultural significance, it should be passed down as an independent section of food. For this, support should be given so that the elderly wives of the eldest sons in head families can organize and record their food preparation methods and systematic academic surveys and research must be conducted on the food culture of head families. As the expectations that general people have in regard to head family food begins with the humanistic spirit and cultural value that can be sensed from head families, it is appropriate for food that clearly displays the memorable spirit of certain people and food with great historical and cultural significance in each individual head family to be passed down and experienced first.
To uniformly preserve head family food, the individuality of food preparation and sharing of each head family must be vitalized and it is proper for the food to be made and eaten according to the decorum and culture of each head family. On one hand, characteristic yet discontinued food of the head family must be passed down even if it must be reconstructed and head family food that has sustainable value, future-oriented value, and official value should be established and passed down and various people should be allowed to taste head family food without discrimination.
