고려시대 團茶와 흑유잔 연구: 동시대 중국과의 교류를 중심으로 (A Study on the Dancha and Black-Glazed Bowls of Goryeo with an Emphasis on Contemporaneous Interactions with China)

초록

고려시대에는 동시대 중국과 음다풍(飮茶風)을 공유하여 왕실을 비롯한 상류층에서 단차(團茶)가 유행하였다. 단차는 제다(製茶) 과정부터 점다 방식에 이르기까지 수많은 공력과 극도의 정세함이 요구되는 사치품이었으므로 제한된 극 상류층만이 단차를 마실 수 있었을 것으로 생각된다. 송대에는 점다(點茶)하여 백색을 띄는 단차를 마실 때 하얀 빛깔을 더욱 돋보이게 해주는 검은 색의 흑유잔을 가장 선호했는데, 고려에서도 이러한 단차용 흑유잔의 수요가 있었을 것이다.
고려시대에 소비된 흑유잔을 살펴보면, 자체 생산 보다는 수입 의존도가 높았던 것으로 보인다. 국내에서 출토된 중국제 흑유잔은 11세기부터 14세기에 이르기까지 넓은 편년에 걸쳐 다양한 기형이 나타난다. 건요(建窯) 및 길주요(吉州窯)를 비롯하여 정요(定窯), 자주요(磁州窯) 등에서 생산된 흑유완들이 개성 및 고려 유적에서 출토·전세되고, 대중(對中) 무역 항로였던 서해안에서도 중국산 흑유잔이 발견되어 당시의 교류 상을 짐작할 수 있다.
고려에서 흑유자기는 대개 도기질의 호나 병 등 커다란 저장 용기 위주로 제작되었으나, 고려 중기 강진, 부안 지역에서는 청자 태질의 고급 철채(鐵彩) 흑유자가 생산되기도 하였다. 그러나 완, 잔 기형은 수량이 많지 않고, 전면을 철 안료로 단독 채색한 사례는 더욱 드물다. 그럼에도 고려에서 생산된 흑유잔과 중국 수입 흑유잔 사이에 일부 외형적 유사성이 간취되며, 이러한 기형이 청자로도 제작되었음을 확인할 수 있다.
고려는 중국의 차문화를 수용하는 데만 그치지 않고, 이를 고려 안에서 내재화하여 재생산하려는 시도를 끊임없이 해왔다. 그렇기 때문에 대부분 수입에 의지하던 흑유잔에 대해서도 자체적인 생산을 위한 나름의 노력을 기울인 것으로 보이며, 단차를 점다하기에 최적화된 흑유잔의 기형을 고려의 주력품이었던 청자로 번안하려는 시도를 했던 것으로 생각된다.
본 고에서는 베일에 싸여있는 고려시대 차 문화와 찻그릇 쓰임의 일면을 확인하기 위하여 단차용 찻그릇의 전형인 건요 흑유잔과 일차원적인 비교를 시도하였다. 이는 고려에 수입되거나 생산된 흑유잔의 사용성과 특징을 살피는 것을 넘어, 고려에서 제작된 수많은 청자 잔과 완들 가운데 단차용 찻그릇과 비(非) 단차용 찻그릇의 차이를 가늠할 수 있게 해주는 지표가 되기를 기대한다.

영어초록

Having shared tendencies in tea culture with their Chinese contemporaries, elite Goryeo society exhibited a marked preference for dancha (lump tea) throughout its upper echelons and the royal court. Granted, dancha was a luxury item in that each step in the process of producing and eventually whisking and frothing the tea called for a great deal of labor and the utmost precision and care. As such, only a select few at the pinnacle of high society had the privilege of drinking dancha. During the Song dynasty, black-glazed tea bowls were most in favor as they accentuated the pale shades of dancha, which took on a white hue when whisked and frothed in hot water. It is reasonable to assume that there must have been some corresponding demand in Goryeo in respect of black-glazed bowls for dancha use.Examinations of the black-glazed bowls used during the Goryeo dynasty reveal that the kingdom seems to have relied more heavily on imported black-glazed bowls rather than their domestically produced counterparts. The black-glazed bowls of Chinese origin excavated from Korean sites date back to multiple periods ranging from the 11th to 14th centuries and exhibit a variety of forms. The black-glazed bowls of the Jian Yao and Jizhou Yao kilns have been unearthed and passed down from ancient Gaeseong and Goryeo sites alongside those hailing from the Ding Yao and Cizhou Yao kilns to the north. The discovery of even more Chinese, black-glazed bowls around the western coast of Korea—which served as the peninsula’s trade route to and from China—indicates the potentially high level of commerce during the period in question.Black-glazed Goryeo ceramics consisted primarily of large storage containers such as earthenware jars or jugs, while celadon-cast underglaze iron techniques were applied to the creation of high-end black-glazed bowls in the Gangjin and Buan regions during the middle of the Goryeo dynasty. However, forms such as bowls and cups were few in number, withinstances of pieces tinted using a single iron glaze color being rarer still. Nevertheless, we also see certain surficial affinities between the black-glazed bowls cast in Goryeo and those imported from China, as well as evidence that such pieces were reproduced in celadon porcelain.
Goryeo went beyond simply adopting Chinese tea culture, making consistent strides toward both embracing and recreating said culture in an internal capacity. It would therefore seem that Goryeo poured its own effort into the domestic production of black-glazed bowls, the supply of which had been largely reliant on importation. At the same time, its artisans took the optimal structure for preparing dancha and adapted it to suit the celadon ware for which Goryeo culture was best known.
This paper attempts a unidimensional comparison with the archetypal Jian Yao black-glazed bowls to extrapolate the details and character of the hitherto under-examined dancha tea bowls of Goryeo. Its purpose in doing so is to go beyond studying the usage and characteristics of black-glazed bowls either produced in or exported to Goryeo, providing a barometer by which to gauge the disparities between the dancha tea bowls and non-dancha tea bowls among the numerous celadon cups and bowls crafted in the Goryeo dynasty.
