늘봄학교의 초등학교 저학년 대상 지속가능한 식생활교육 프로그램 개발 (Development of Sustainable Food Education Program for Neulbom School focused on Lower Grade Elementary Students)

초록

이 연구는 최근 초등학교에 전면적인 도입을 하고 있는 늘봄학교에서 초등학교 저학년을 대상으로 지속가능한 식생활교육 프로그램을 개발하고 시범 적용하여 늘봄학교 프로그램으로서의 지속가능한 식생활교육 모델을 제안하고자 하였다. 서울 N초등학교 늘봄학교 참여 1학년 학생을 대상으로 2024학년도 2학기부터 15주간 총 30차시를 개발하여 운영하였다. 지속가능한 식생활 실천을 위한 바른 식습관 형성 및 기초 조리역량 함양으로 교육의 방향성을 설정하여 식생활의 중요성, 미각 교육, 다양한 식품에 대한 이해와 기초 조리, 음식물 쓰레기 줄이기 등 일련의 교육을 초등학교 1학년 발달 단계에 맞춰 개발하되 학부모의 요구도 반영하고자 하였다. 각 주차별 교안 및 교구･교재를 자체 개발하였고, 동화책 스토리텔링 및 신체를 활용한 표현 활동, 놀이를 통한 원활한 의사소통 등을 통해 기초적인 자기관리역량 신장을 목표로 하였다. 프로그램의 효과는 연구자의 학생 변화 관찰, 기록, 학생 산출물 분석과 함께 연구참여자 등의 인터뷰를 통해 평가하였다. 그 결과, 학생들의 식습관 개선 및 사회성 발달을 통한 자기관리역량 강화 효과, 학생과 학부모의 프로그램에 관한 관심과 흥미의 상승, 초등학교 전 학년 학생에게 확대 운영의 필요성을 확인할 수 있었다. 늘봄학교 프로그램의 확대 운영을 위한 준비 및 개선점으로는 학년군별 맞춤형 식생활교육 프로그램 개발 및 지원, 신체 발달 수준에 맞는 다양한 조리도구의 마련 및 공급, 조리교육을 위한 위생과 안전에 대한 인식 개선과 환경 정비, 실습 재료 준비 및 음식물처리를 위한 효율적인 행정적 지원의 필요성 등이 요구되었다. 돌봄과 교육이 융합된 새로운 교육적 시도 속에서 초등 교육과정에서 충분히 제공되지 못했던 식생활교육을 늘봄학교 프로그램으로 제공함으로써, 초등학생들에게 지속가능한 식생활 측면에서 자기관리역량을 길러줄 수 있는 프로그램으로 확대되어 나가길 기대한다.

영어초록

This study developed and evaluated a sustainable food education program for lower elementary school students as a model for Neulbom School, a recently introduced program providing child care and education in elementary schools.
The program consisted of 30 sessions over 15 weeks during the second semester of the 2024 academic year for first-grade students at an elementary school in Seoul. Focusing on fostering healthy eating habits and cultivating basic cooking skills for sustainable food practices, a series of lessons were developed on the importance of eating, taste education, awareness of diverse foods, basic cooking, and reducing food waste. These lessons were designed in line with the developmental stages of first graders and included content on cooking practices that reflected and addressed the needs of both students and parents. To this end, necessary lesson plans and teaching materials were developed for each lesson, creating a student-centered approach that met the needs of the target audience. We aimed to nurture basic self-management skills through storytelling with children's books in line with students' developmental stages, body expression activities, and communication through play. Program effectiveness was evaluated through observations of students' behavior, records, and class outputs, as well as participant interviews. The results showed improved basic lifestyle habits and social development, strengthening self-management capabilities. Moreover, both students' and parents' interest in the program increased as they recognized its potential and the need for its expansion as an effective educational tool for elementary school students. Recommendations for program improvement and expansion included customizing and supporting school-based food education programs, developing and expanding age-appropriate cooking utensils, improving awareness and providing the necessary equipment for hygiene and safety for cooking, and offering efficient administrative support for material preparation and food handling.
As a novel educational approach that combines care and education, this study seeks to expand the food education component—traditionally underrepresented in the elementary school curriculum—into a program that fosters self-management skills in food management through educational activities offered by the Neulbom School.
