섬·해안지역 중·고등학생 급식 선택속성에 대한 IPA분석 연구 (An IPA Analysis Study on Meal Selection Attributes of Middle and High School Students on Islands and in Coastal Areas)

초록

섬·해안지역 주민은 일반인에 비하여 어패류의 섭취가 많다. 어류나 패류를 많이 섭취하는 식습관은 유아기에 형성되어 청소년기에 완성된다. 일반적 섬·해안지역 가정에서 하는 식사인 향토음식인 만큼 섬·해안 지역에서 구하기 쉬운 식자재로 음식을 만든다. 또한 유아기에 인식된 맛으로 식습관이 형성된다. 그러므로 식습관을 교정 할 수 있는 기회는 학교급식이다. 그러므로 섬·해안지역 중고등학생들이 학교급식은 매우 중요하다. 학생들에게 효과적인 급식교육을 하기 위하여 학생들의 메뉴에 대한 중요도와 만족도가 어떻게 인식하는지를 파악하는 것이 학교 급식교육의 기초 될 것이다.
섬·해안지역 중고등학생들에 인식에 대하여 알아보면, 비교적 낮은 평균값인 3,5이하로 나타난 요인은 사회적체면중요, 사회적체면만족, 동행권유만족, 종사자추천만족 등 이다. 비교적 높은 평균값으로 나타난 요인은 음식맛만족, 음식향중요, 균형성중요, 음식양중요, 조리법중요, 다양성중요, 음식온도중요, 음식질중요, 신선도중요, 음식맛중요 등이다. 그리고 섬·해안지역 중고등학생들이 학교급식에 대하여 중요도와 만족도 간의 차이를 알기 위하여 IPA분석을 하였다.
IPA분석 결과, 유지 관리영역에 속하는 요인은 조리법, 다양성, 음식온도, 음식향, 음식양 등으로 나타났다. 중점개선영역에 속하는 요인은 디자인, 종사자수, 가격, 음식외관, 체질과 건강, 동행권유 등으로 나타났다. 과잉투자영역에는 음식맛, 음식질, 균형성, 신선도 등으로 나타났다. 현상유지유지에는 과거경험, 메뉴이벤트, 계절성, 사회적체면, 당일기분 등으로 나타났다.
실증 분석 결과를 통하여 유출한 시사점은 다음과 같다. 첫째, 학생들은 영양공급측면인 아닌 요인에 대하여 음식 조리 영역을 중시한다. 그러므로 급식을 영양측면에서 접근하는 영양교사와 영양사에 대하여 정기적인 새로운 조리 방법 교육이 필요하다. 둘째, 학교급식도 식판 등 집기 선택과 푸드 스타일링에 노력을 하여야 할 것이다. 셋째, 급식이나 외식업에서 음식맛, 음식질, 균형성, 신선도 등은 기본적 사항이고 상향 평준화되고 있다는 것이다.
본 연구 한계는 첫째, 표본선정이 경상도지역에서 편의 추출하여 연구 결과를 전국 섬·해안지역으로 일반화하는 데에는 한계가 있다. 둘째, 본 연구는 급식 전체에 대하여 중요도와 만족도를 조사하였으나 이를 원자재별로 세분화하면 급식 교육 현장에서 보다 더 쉽게 활용할 자료가 될 것이다.

영어초록

Generally, those living in islands and coastal areas tend to eat more seafood than general populace. Meanwhile, the seafood-eating habit is usually formed at childhood and then completed at adolescence. Since most seafood are local foods, they are usually made with ingredients exclusively found in the sular and coastal areas. Furthermore, in general, the lifetime tastes are usually found at early childhood. Given that, the critical opportunity to correct eating habits are school meals. In addition, that explains why school meals are very important for students of middle and high schools located in islands and coastal areas. Therefore, the importance of school-meal education in those regions is paramount, and in turn its basis begins from understanding students' perception about the importance and satisfaction given to various menus. Also, that perception was the main subject of the survey described below.
In this survey searching about perceptions of middle and high-school students living in islands and coastal areas, relatively low scores(equal or below 3.5) were observed for subjective importance of social-reputation, satisfaction with their social reputation, satisfaction on recommendation for accompaniment and the one made by employees.
Meanwhile, relatively high scores appeared among food-taste satisfaction and given importance for following factors: flavor, menu-equilibrium, food amount, recipe, diversity, temperature (for food-preservation), quality, freshness and taste. Thus, to clarify the difference between subjective importance and satisfaction on school-menu, IPA(Importance-Performance Analysis) analyses were conducted.
As a result, it wasfound that the following domains belong to maintenance factor: recipe, diversity, temperature, flavor and quantity. Meanwhile, it was revealed that the following were categorized into "in need for improvement"— they are: design, the number of employees, price, dishes' appearance, health effect, and recommendation for accompaniment. Also, the following were classified into categories of status quo: past experience, menu event, seasonality, social reputation and daily mood.
Furthermore, additional implications were found through further empirical analyses. Firstly, when setting aside nutritional aspects, students tended to prioritize food-cooking elements. This suggests need to strengthen regular new-cooking training for nutrition teachers and nutritionists, those who usually tend to approach school meals only in terms of nutrition. Secondly, more attention needed on furniture selection and food-styling for school-meal services. Thirdly, both for school-meal and restaurant business, the elements like taste, quality, balance and freshness are just basic requirements; in both areas, the level is rising in overall.
Admittedly, this research paper’s limitations are twofold. First, the respondents data were collected based on convenient sampling method only for residents of Gyeongsang South Province, which alone does not represent the whole Korea. Secondly, both importance and satisfaction were surveyed only at overall level for school-meal affairs — this means, further researches should be made based on ingredient-specific surveys, to bring a more practical contribution to school-meal education.
