초록

Bee pollen is a natural substance collected by honeybees from various flower pollen, and has been used as healthy food with anti-oxidative, anti-cancer and anti-inflammatory effects. In this study, we evaluated the nutritional value through proximate analysis of pollen collected from flower of Castanea crenata by Apis mellifera. The carbohydrate of Castanea crenata bee pollen (CCBP) was the highest content among the three major nutrients, followed by crude protein content. The content of crude fat in the CCBP was less than 2%. The sugars analysis of the CCBP showed that the fructose content was higher than that of 4 sugars. These results can be used as basic data for development of diverse food materials using the CCBP
