레스토랑 공급자의 친환경 공급망관리가 레스토랑 협력 및 환경성과에 미치는 영향과 친환경 의식의 조절효과 (Effects of Restaurant Suppliers’ Sustainable Supply Chain Management on Restaurant Cooperation and Performance: The Moderating Effect of Restaurant Environmental Awareness)

초록

본 연구는 레스토랑 공급자의 친환경 공급망관리, 레스토랑 협력, 레스토랑 환경성과 사이의 영향관계에 대해 밝히기 위해 진행 되었으며 친환경 공급자와의 레스토랑 협력이 레스토랑 공급자의 친환경공급망관리와 레스토랑 환경성과 사이에서의 매개역할에 대해 분석 하였다. 또한, 레스토랑의 친환경의식수준이 연구모형의 경로 사이에서 조절역할을 하는지 알아보았다. 설문은 친환경 공급업체와 거래하는 독립레스토랑 운영자 및 프렌차이져 레스토랑 매니저를 대상으로 진행을 하였고 총 297개의 응답지가 분석에사용되었으며 빈도분석 및 구조방정식 모형의 검증을 위해 SPSS21과 AMOS 20.0을 활용하였다. 연구 결과레스토랑 공급자 친환경 공급망관리는 레스토랑 협력과 환경성과에 긍정적인 영향을 미치는 것으로 나타났으며 레스토랑 협력은 레스토랑 공급자의 친환경 공급망관리와 레스토랑 환경사이에서 매개 역할을 하는것으로 밝혀졌다. 레스토랑의 친환경 의식은 친환경 공급자와 레스토랑 환경성과 사이에서 낮은 레스토랑의친환경 의식이 유의한 결과를 나타냈으며, 레스토랑의 협력과 레스토랑의 환경성과 사이에서 높고 낮은레스토랑의 친환경 의식이 모두 유의한 결과를 나타냈다. 하지만, 친환경 공급자와 레스토랑 협력사이에서레스토랑의 친환경 의식은 유의하지 않았다. 본 연구는 분석 결론을 바탕으로 레스토랑의 효과적인 지속가능한 경영 전략을 제시하며 성공적인 레스토랑 환경성과를 달성하기 위한 이론적 및 경영적 측면의 유용한정보를 제공한다.

영어초록

This study was conducted to investigate the relationships among sustainable supply management, restaurant cooperative behavior, and restaurant performance. Especially, restaurant cooperation towards green suppliers was tested as a meditation variable on the relationship between sustainable supply chain management and restaurant performance. Also, restaurant environmental awareness was tested if it moderated the hypothesized relationships. Data were obtained from restaurant owners and managers and a total of 297 responses were used for the data analysis. Results revealed that sustainable supply management had a positive effect on restaurant cooperative behavior and performance. Also, restaurant cooperative behavior with sustainable suppliers played a mediating role between sustainable supply management and restaurant performance.
In addition, the moderating effects of restaurant environmental awareness on the hypothesized relationships were partially supported. More specifically, restaurants with low environmental awareness were more significantly affected by suppliers’ sustainable chain management, thus improving their performance. In addition, when restaurants have high environmental awareness, the effect of their cooperation on restaurant performance significantly improved. Our results were employed to provide some useful information in terms of theoretical and managerial implications for developing more effective restaurant sustainable management strategies and ultimately for achieving successful restaurant performance.
