초록

동아시아에서 분뇨가 적극적으로 활용된 요인은 다양했다. 우선 전통적인 天地人사상과 생태순환관은 배설물도 농업에서 이용 가능한 자연물의 일부로 인식하게 해주었다. 퇴비를 腐熟하는 방식 역시 동아시아에서 익숙한 발효법에서 비롯되었다. 분뇨는 부속을 촉진하는 미생물로서 이용되었던 것이다. 조선의 온돌에서 매일 생산된 재는 人糞과 결합되면서 독특한 조선의 비료를 만들어 내기도 하였다.
송대 이후, 특히 명청시대가 되면 동아시아 모두 水田의 追肥에 淸水糞이 많이 이용되었으며, 그 후 蠶桑業, 과수원예재배가 발달하고, 작물의 復種지수가 늘어나면서 분뇨의 이용이 더욱 확대되었던 것이다. 그렇다고 분뇨가 전근대사회에서 무조건 자원으로 환영받은 것은 아니었다. 일찍부터 분뇨를 통한 위생문제가 제기되었으며, 송대에는 전문적으로 환경위생 처리작업자도 등장하였다. 그런가 하면 명청시대 강남지역에는 糞船을 이용하여 邑으로부터 분뇨를 구입하여 적극적으로 활용했다.
동아시아의 근대화가 진행되면서 건강과 청결의 이름으로 厠間이 개량되고, 분뇨는 각종 질병과 오염의 원천이 된다는 점에서 청산의 대상이 되었다. 분뇨가 폐기물로 인식된 또 하나는 각종 기생충을 전파하는 온상으로 여겼기 때문이다. 그 결과 분뇨시비가 농약과 화학비료의 역할을 대신하였으며, 분변은 배출과 동시에 영원히 물과 함께 사라져야 할 대상으로 자리 잡게 된 것이다.
문제는 이렇게 변화된 이후 먹거리로 인해 건강과 생명은 더욱 위협을 받고 있다는 점이다. 농약과 독극물로 인해 각종 자연생태계의 파괴와 오염은 물론이고, 유전자조작식품과 농약중독으로 인간의 호르몬에 영향을 끼쳐 신체의 기능을 약화시키고, 性조숙성을 불러와 인간신체에 근본적인 변화를 일으키고 있다. 친환경식품과 유기농산물을 찾고 있지만, 식품은 이미 신분의 상징물로 변화고, 모두가 기존의 농축산품에 중독되어 위기를 크게 느끼지 못한 채 생활하고 있다.
우리에게 有機農業이 중요한 것은 식품은 곧 우리의 생명체 그 자체이며, 농업은 이를 가꾸는 생태산업이다. 더 이상 농업을 과거의 1차 산업으로 인식하는 데서 나아가 환경과 공존하는 동시에 우리의 생명과 미래를 건강하게 보전하는 제6차 산업으로 다시금 인식할 필요가 있겠다. 농업사 연구도 기존의 방향에서 食物史나 生態史 위주로 전환할 필요가 있다.

영어초록

There were a variety of causes for utilizing manure in east Asian countries like South Korean and China. The traditional idea of ‘heaven, earth and man’ and the point of view of ecological circulation, before anything else, helped to perceive manure as a utilizable natural object among others in agriculture. The method for making compost by decomposing was also derived from the familiar fermentative method in East Asia. Manure was utilized as a microorganism which promotes decomposition. Ashes daily produced from ondol of Chosun was combined to human feces to make a fertilizer peculiar to Chosun as well.
After the Sung dynasty, especially during the Ming and Qing dynasties, the whole region of east Asia utilized excremental water as an additional fertilizer for paddy fields, which developed sericulture and fruit gardening increasing the multiple planting index of crops and further expanding the utilization of manure. It does not mean, however, that manure was welcomed as an unconditional resource in the pre-modern society. The sanitary problems related to manure were raised earlier on, and still, in the Sung dynasty, there appeared a professional occupation called environmental sanification worker. Jiangnan region in Ming-Qing dynasties also, on the other hand, actively utilized manure purchased and carried by manure ships from counties.
As modernization of East Asia proceeded, however, toilet sheds were improved under the titles of health and cleanliness and manure was taken as the object of elimination in being the source of various diseases and pollution. Another cause for recognizing manure as a waste matter was that it was taken as the breeding ground for various parasites. As the result the application of manure was replaced by agricultural pesticide and chemical fertilizer, and human excreta was settled as the object to be washed up for good with water as soon as it is excreted.
The problem lies in that health and life are in a greater threat by the food after the abovementioned transformation. Agricultural pesticides and toxic substances are causing various types of destructions and pollution of natural ecosystem, weakening bodily functions by affecting human hormones by genetically modified food and agrichemical poisoning, and causing a fundamental change in human body by bringing precocious puberty. People are looking for environment-friendly food and organic agricultural products, but food has already been turned into the symbol of one's social status, letting most of us live on in toxication from the existing agricultural and farm products without sensing a serious crisis.
Organic agricultural products are important to us because food is life and agriculture is a future industry as well as an ecological industry. In that sense, agriculture should not be taken as the first industry of past, but as the sixth industry which preserves the ecological environment and our sustainable lives and future, anew.
