화개지역 야생수제차의 생산관행과 지속요인 (The Manufacturing Tradition of the Wild Hand-made Tea of Hwa-gae and Reasons Why this Tea Continues to Exist Today)

초록

차(茶)는 특정한 기후와 습도 등을 요하는 작물이기 때문에 생산지역이 한정적이며, 지역에 따라 생산관행도 달리 나타난다. 본고는 우리나라 야생수제차 생산지로 대표되는 하동군 화개면을 연구대상으로 선정하여, 야생수제차의 생산관행과 지속요인이 무엇인지 살펴보는 것을 목적으로 한다.
이 목적을 달성하기 위하여 먼저 화개 야생수제차 생산의 역사적 배경에 대하여 사료와 지역관련 자료들을 통하여 살펴보고, 다음으로 현재까지 전승되어 행해지고 있는 화개지역 야생수제차의 생산관행을 현지조사와 면담, 참여관찰 등을 통하여 살펴보았다. 특히 생산관행에 있어서는 야생차밭관리, 채다, 제다법 등으로 나누어 살펴보았다. 마지막으로 역사적 배경과 현재의 생산관행을 바탕으로 하여 화개지역에서 야생수제차 생산이 지속될 수 있었던 요인에 대하여 분석하였다.
그 결과 화개지역에서 야생수제차가 지속될 수 있었던 요인으로는 다음의 두가지를 들 수 있다. 첫 번째 요인은 야생종 차나무의 생육에 적합한 생태환경이다. 화개지역은 화개천을 중심으로 심한 협곡을 이루고 있어 횡근성의 뿌리를 가진 일본 개량종 차나무의 재배에 적합하지 않다. 그래서 타 지역과는 달리 일제시대 이후에도 화개의 야생종이 개량종 차나무로 대체되지 않고 지속될 수 있었다. 더불어 화개의 야생종 차나무의 경우 오랜 역사동안 지역의 자연환경에 적응하여 특별한 관리가 없었던 시절에도 소실되지 않고, 이어져 왔다. 이러한 야생종 차나무의 지속은 수제덖음제다의 지속을 가져왔고, 이렇게 지속된 야생수제차의 전통은 타 지역과 구별되는 화개지역만의 특징이 되었다. 두 번째, 지속요인은 화개의 지리산 불교와 사찰의 선승들이라 할 수 있다. 화개는 오랫동안 사하촌 형태의 지역 구조를 가지고 있었고, 야생차의 생산 또한 이들에 의해 관리되었다. 오랜 옛날 화개를 매우고 있었던 수많은 사찰들은 사라지고 없으나 그들이 관리했던 야생차밭은 지금도 이어져 내려오고 있다. 또한 쌍계사의 스님들은 전통 수제덖음제다법을 현대까지 이어온 장본인이기도 하다. 이처럼 화개의 불교문화와 사찰은 야생수제차 생산을 지속시킨 요인으로 볼 수 있다.

영어초록

Since the growing and maintenance of tea requires specific climate and humidity, the area of its production is limited and its manufacturing practices vary according to the regions. This study aims to look at how wild hand-made tea is manufactured and the reasons for their continuation by observing how tea is made in Hwagye-myeon, Hadong -gun, an area well known for its production of wild hand-made tea.
For this purpose, I first looked into the historical documents on the production of Hwagae handmade tea. Then I studied the manufacturing practice of the tea, which by the way continues to this day. I visited the manufacturing sites, interviewed with the people who make the tea, and participated in the tea-making process. I learned that the manufacturing process goes through three different stages: managing the wild tea field, gathering tea leaves, and actual making of the tea. Finally, based on historical background and actual practices, I present the reasons why the manufacturing of wild hand-made tea in the area continues until today.
There are two reasons why this industry is still present in the Hwagae area. The first is that the area has a favorable natural environment for growing wild tea plants. Since Hwagae is a steep valley through which the Hwagae stream flows, it cannot accommodate tea plants from Japan, whose roots tend to spread horizontally. Therefore, the wild tea plants of Hwagae were not replaced with the improved breed during Japanese occupation. And since the wild tea plants of Hwagae had long been adapting themselves to the natural conditions of the area, it did not go extinct even when they did not benefit from human care. Their continuous existence led to the rich industry of hand-roasted tea, which became a unique feature of Hwagae tea production, distinct from the practices of other areas.

The second reason why this special tea continues until today is the care of the monks of the temples of Mt. Jiri. Hwagae had long been known as a ‘village below the temples,’ and the production of the wild teas had been the job of the temple monks. Even after the disappearance of numerous temples that had long filled the mountainous of Hwagae, the wild tea field continues to this day. The Sanggye Temple monks were responsible in keeping the traditional hand-roast, tea-making methodology to this day, and for this reason, it can truly be said that the Buddhist culture and Hwagae temples contributed to the continuing tradition of producing wild hand-made tea in the area.
