한식 젓가락의 문화적 특성에 관한 연구 (Characteristics of Chopsticks in Korean Culinary Culture)

초록

한류열풍과 더불어 한국의 식문화에 대한 관심이전 세계적으로 확산되고 있다. 역사적으로 한국의 식문화는 자연환경과 사회․문화적 환경의 변화에 따라전이(轉移)와 변용(變容)되어왔지만 고유한 식문화의기본적 원형(原形)을 간직하고 있다. 21세기의 다문화시대에 한식 문화(韓食 文化)는 서구의 식문화 영향과퓨전화 현상으로 음식뿐만 아니라 수저․식기․소반등의 식도구의 발달과 형태의 변화를 가져왔다. 특히쌀을 주식으로 하는 한․중․일의 식탁에서 공통으로사용되는 젓가락은 단순히 음식을 먹는 식도구가 아니라, 3국의 자연환경과 사회적․문화적 특성을 반영한 문화적 상징이라 할 수 있다.
세계적으로 젓가락은 서양식의 포크와 대칭되어 동양 식문화의 대표적 식도구의 상징으로 인식되고 있으며, 이러한 상징성으로 인하여 자칫 한국의 젓가락문화가 중국 또는 일본의 젓가락과 유사하게 인식되는 경향이 있다. 그러나 한국의 수저문화는 삼국시대부터 중국과 일본과는 다른 형태와 재질을 바탕으로고유한 문화적 정체성을 확립하여 왔다. 그러므로 한식 문화의 확산과 문화적 정체성을 확립하기 위하여한․중․일의 젓가락 문화에 관한 연구를 바탕으로한국의 독특한 문화적, 조형적 특성을 가진 젓가락 문화에 관한 연구가 시대적으로 필요하다.
본 연구의 역사적 문헌 연구를 바탕으로 한국의 문화적 환경과 식문화, 한국 식문화의 젓가락의 역사 및유형, 한국의 식문화와 젓가락의 특성, 젓가락의 문화적 특수성과 보편성 등을 중심으로 하였다. 한․중․일 3국의 공통 식도구인 젓가락 문화의 공통성과 차별성을 통해 한국 식문화의 정체성을 연구한 결과는다음과 같다. 첫째, 한국은 자연환경과 사회․문화적환경의 영향 속에서 고유한 식문화를 형성하였으며,쌀을 주식으로 하는 동양의 문화권의 중국, 일본과 함께 젓가락 문화가 중요한 식도구로 자리매김하고 있다. 둘째, 한․중․일의 젓가락 문화에서 한국 상차림의 젓가락의 형태와 재질을 바탕으로 한식문화의 고유한 문화적 특성을 엿볼 수 있다. 한국 젓가락의 형태는 중국과 일본의 젓가락에 비하여 중간적인 형태특징을 가지고 있으며, 재료는 금속재를 사용하는 것이 목재를 사용하는 중국과 일본과는 다른 특징이다. 셋째, 다문화시대에 한국 젓가락 문화의 고유한 특성을 재해석하여 현대의 보편적 도구 문화로 발전시키는 것이 필요하다.
젓가락의 전통적 기능과 형태를 바탕으로 현대의식문화에 부응하는 다양한 형태와 재질의 디자인 개발이 필요하다. 따라서 한국의 젓가락 문화에 관한 현대적 연구는 동양의 문화권 속에서 한국의 이미지를각인시키고 문화 정체성을 가진 식문화를 세계 속에 알리는 계기가 될 것이다.

영어초록

A growing interest of today’s Korean culinaryculture is spreading around the world in conjunctionwith Hallyu, the Korean Wave. Even though the cultureof Korean food has historically gone throughtransformations according to different natural andsociocultural environments, its original form andtraditional attributes are still remaining. The 21stCentury is a multicultural era where different culinarycultures integrate and make fusion cuisine and manner.
Korea’s culinary culture did not merely undergotransformations of food itself, but has brought changesin cutlery, dishes, and dining tables. EspeciallyNortheast Asian countries such as Korea, China, andJapan where rice is produced and consumed as people’smain food source, chopsticks placed on the table are notsimply eating utensils but a symbol that reflects thenatural environment and sociocultural characteristics. Chopsticks have long been recognized as Asia’stypical dinnerware as opposed to the West’s forks andknives; however, because of this symbolism, Korea’scultural background of using chopsticks is oftenconsidered the same as that of China or Japan. However,cutlery culture in Korea from the Three Kingdomsperiod has been established a unique cultural identityon the basis of shapes and materials different fromChina and Japan.
Therefore, a timely study on Korea’s chopstickculture based on aesthetical analysis and comparisonwith China and Japan is required in order to expandKorea’s culinary culture and solidify its culturalidentity. This thesis is focused on Korea’s culturalenvironment, history and types of chopsticks, andspecificity and generality of chopsticks by researchinghistorical documents.
The study on similarities and differences betweenthe three nations’ chopstick use has brought threefindings. First, Korea has its own unique food cultureunder the environmental and sociocultural influence, butalso shares the same cultural zone with China and Japanwhere rice is a staple food and chopsticks are primaryeating utensils. Second, a distinctive feature of Koreanchopsticks was found in their forms and materials. Chopsticks used in Korea have intermediate shapebetween China and Japan, and are often made out ofmetal compared to the other two countries where woodis the main material. Third, a reinterpretation of thecharacteristics of Korean chopstick culture is necessaryto make the utensils evolve into a general culturalmedium which incorporates the traditional function andalso fits the modern food culture by having a varietyof shapes, materials, and designs in today’smulticultural age.
This study of Korean chopstick culture from themodern viewpoint will be a stepping stone forpromoting Korea’s distinctive image among the Asiancultural area and spreading the nation’s food culture andits identity to the world.
