초록

오늘날 경제적인 성장과 함께 사회가 풍요로워지면서 식탁문화도 음식의 먹는 즐거움뿐만 아니라 시각적인 즐거움이 중요하게 나타나고 있다. 상차림에서 음식을 담는 식기, 식탁, 꽃 등 식공간의 장식과 분위기를 나타내는 디자인적 측면의 중요성이 커지면서 상차림에 계절감과 생동감을 주는 화예디자인의 역할은 점차 중요한 위치를 차지하고 있다.
그러나 세계 여러 나라들과의 활발한 문화교류로 우리식탁 문화는 서구화되고 있으며, 특히 한국의 현대 상차림에서도 이러한 경향이 나타나고 있다. 이러한 시점에서 화예디자인도 서양 사조를 모방하기 보다는 우리 민족의 정서와 문화가 깃들어 있는 전통 화예디자인을 새롭게 해석하여 현대적이면서도 보편적인 화예디자인의 방향을 모색해야 한다.
1990년대 이후의 한류열풍과 더불어 웰빙식인 한국의 식문화에 관심이 높아지면서 상차림의 화예디자인 역시 시대적 요구에 따라 변형, 개발하여 현대적 의미로 재해석하는 일은 중요한 과제로 인식되고 있다. 따라서 본 연구 목적은 현대식 한국상차림에 어울리는 화예디자인을 현대적 의미로 재해석하여 상차림의 목적에 부합되면서 동시에 세계인의 미적 성향에 부합하는 화예디자인을 제안하고자 한다. 본 연구의 대상은 2004~2007년의 토야 테이블웨어 페스티벌의 상차림에 표현된 화예디자인을 중심으로 일반인･플라워 전문인･음식전문가의 설문지 조사 및 분석을 바탕으로 한다. 본 연구의 연구결과는 다음과 같다.
첫째, 일반인과 플라워 디자이너, 음식전문가에 대한 현대식 상차림에서의 화예디자인에 관한 선호도 분석을 토야 테이블웨어 페스티벌의 수상작품 16점을 대상으로 상차림의 유형별 선호도 조사를 실시하였다. 상차림에서 화예디자인의 높이는 모두 눈높이 보다 낮은 디자인을 선호하였고, 선호하는 화예디자인의 배치 역시 상차림 중앙에 장식하는 것이 일반인, 전문가 각각 동일하게 높게 조사되었다. 화예디자인의 유형은 모두 수평형의 내츄럴 이미지 상차림을 가장 선호하는 것으로 나타났다. 그러므로 상차림의 전체적 이미지를 내츄럴한 이미지의 색상을 선택하고 화예디자인은 테이블･테이블클로스･식기류 등의 색채 조화를 고려하여 강조색으로 사용하는 것이 바람직하다. 또한, 현대식 한국상차림에서 화예디자인은 시간·장소·목적(T·P·O: Time, Place, Object)에 따라 색상과 이미지를 표현해야 할 것이다.
둘째, 상차림의 주제와 목적을 정확히 파악하고 도예가･플라워디자이너･음식전문가의 충분한 커뮤니케이션으로 각각의 전문성을 중요시하여 조화를 이루는 것이 무엇보다도 중요하다. 그리하여 현대식 한국상차림에서 음식과 식기의 관계, 화예디자인과의 조화, 그리고 한국적인 정서와 미감을 보여주는 전체적인 상차림의 조화를 고려해야 한다.
셋째, 변화하는 시대적 요구에 맞게 전통과 서양의 화예디자인의 특성을 이해하고 적당한 수용(受容)과 순응(順應)을 통해 우리 민족의 주체성을 바탕으로 세계인의 감성에 부응하는 보편적 화예디자인을 추구해야 한다.
이러한 연구의 결과로 현대식 한국상차림의 화예디자인 유형을 제안할 수 있으며, 상차림에서 전통과 현대의 미를 살린 화예디자인의 재창조가 이루어질 것으로 기대된다.

영어초록

There are more people appreciate their flourishing lives thanks to the economic development. Therefore, the visual pleasure became as significant as tasty treats in table culture. The design aspects have taken on greater importance on place setting such as plates, tables and flowers which decorate the atmosphere. Especially flower design, which gives a sense of the seasons and vitality, became emphasized as well.
However, Korean table setting is altered to the western style particularly in modern age, as the cultural exchange became active all over the world. In this point, it is necessary to seek for the direction of flower design that is universal with modernized beauty as newly interpreting traditional flower design of Korea which embraces Korea's spirit and culture.
Since 1990s, the interest in Korean food culture has become widespread along with Korean wave. Likewise, flower design on table setting is understood to be a significant task by reinterpreting as modern meaning through variation and development of the style that promptly meets the needs of the times.
Therefore, the objectives of this research is to suggest the flower design that goes well with the world's aesthetic preference and the original purpose of table setting at the same time by reinterpreting as modern meaning of flower design that agrees to Korean table setting.
The target of this research is mainly focused on flower design from TOYA Tableware Festival 2004～2007. In addition, it is also based on the research and analysis on questionnaire for the public, flower designers and food experts. The result of this research is as follows: First, a questionnaire was carried out for the public, flower designers and food experts inquiring preferred style of table setting. And the preference of flower design in modern table setting is analyzed largely regarding on the 16 winning works of TOYA　Tableware Festival. On table setting, the height of flower design is preferred horizontal but lower than eye sight level. The position of the flower design in the middle of the table is highly preferred both from the public and experts. In the style of flower design on table setting, the horizontal and natural decoration is widely favoured. Therefore, the overall style of table setting is suggested that having comfortable and stable decoration in general by using natural colour but the flower design is better to attract attention as giving vigorous image by coordinating table, tablecloth and tableware. Also, it is important to consider T‧P‧O: Time, Place and Object when designing colour and image of modern Korean table setting.
Secondly, it cannot be overemphasized to understand the subject and purpose of table setting and to be coordinated with ceramic artists, flower designers and food experts by magnifying specialty through sufficient communication. And it is necessary to examine the harmony of the overall table setting that embraces the spirit and tasty treats of Korea regarding the relationship between food and tableware in modern Korean table setting and the agreement with flower design.
Thirdly, understanding the traditional and western style of flower design is inquired to meet the needs of the times. In this sense, the universal flower design should investigated to satisfy the international aesthetics by proper accommodation and adjustment based on the subjectivity of Korea.
The result of this research can suggest the style of flower design in modern Korean table setting and it is expected to accomplish the recreation of flower design with traditional and modern beauty.
