호남 서부지역 원삼국∼삼국시대 수혈주거지의 취사 공간 연구 (A Study on Cooking Space in the Pit Dwellings from the Proto-Three Kingdoms Period to Three Kingdoms Period in the Western Honam)

초록

이 글의 목적은 호남 서부지역 원삼국∼삼국시대 수혈주거지에 남겨진 부뚜막과 연도, 취사기, 식기, 저장기, 그리고 식물 유체 등을 분석하여 당시 취사 및 식문화의 일면을 복원하는 데에 있다.
이를 위해 기존의 연구 성과를 바탕으로 주거지 세부 속성 및 출토유물의 부장 양상을 고려하여 호남 서부지역 원삼국∼삼국시대 수혈주거지의 분기 및 연대를 Ⅰ∼Ⅱ기로 구분한 후 자료를 검토하였다. Ⅱ기는 마한사회의 물질문화가 백제와의 관계 속에서 변화가 나타나는 시기이다.
점토와 솥(장란형토기), 솥받침, 연도 등으로 구성된 마한의 부뚜막은 단순히 음식을 끊는 방식으로 조리할 뿐만 아니라 솥과 시루를 활용하여 쪄낼 수 있게 했던 취사 시스템이었다. 이러한 취사 시스템을 통해 나타난 취사 방식의 다변화는 좀 더 다양한 식재료를 활용한 음식을 섭취할 수 있게 해주었고 이는 당시 사람들의 영양 상태에까지 긍정적인 효과를 주었을 것으로 추정된다.
그러면서 부뚜막 주변으로는 취사기와 식재료 보관을 위한 저장기 등이 자연스럽게 자리하게 되고 주거 내 취사 공간이 부뚜막을 중심으로 형성되었던 것으로 이해된다. 이에 더하여 부뚜막에 부가된 연도는 추운 겨울을 지낼 수 있도록 취사 시 발생한 열기를 집안에잠시 머물게 해줌으로써 난방까지 겸할 수 있게 해주었다.
이와 같은 부뚜막은 마한시기에 점토 구조물로 만들어지다가 백제의 영향이 있던 시기부터는 석재를 부뚜막 구축에 사용하거나, 기반토를 굴착하여 부뚜막의 양 벽과 배연 시설을마련한 것이 등장한다. 특히 배연을 위한 목적으로 주거지 안쪽 벽에 시설되었던 연도가주거지 밖에 배치되는 것도 특징적이며, 아궁이에 부착했던 토제품(아궁이테) 역시 새롭게등장하는 것을 살펴 볼 수 있다.
이러한 변화가 나타나는 주거지에서는 솥으로 사용된 장란형토기나 시루에서도 세부 형태와 타날방식에서 변화가 간취될 뿐만 아니라 백제의 대표 기종인 개배, 고배, 삼족토기등이 함께 발견된다. 이는 마한사회의 취사 공간이 백제와의 관계 속에서 전환이 이루어지고 발전되어 갔음을 보여주는 것이라 할 수 있다.

영어초록

The purpose of this study is to restore one aspect of cooking and food culture at the time by analyzing fireplaces, flues, cooking utensils, tableware, storage containers, and plant remains in the pit dwellings from the Proto-Three Kingdoms to Three Kingdoms Period in the western Honam.
To this end, this study divided quarter and period of the pit dwellings from the Proto-Three Kingdoms Period to the Three Kingdoms Period in the western Honam, into Period I and Period II, based on the previous research results, in consideration of the detailed properties of the dwellings and the burial aspect of excavated relics, then it reviewed the data. Period II is a period in which the material culture of Mahan society changed in its relationships with Baekje.
Mahan’s cooking fireplace, which consisted of clay, pot(egg-shaped pottery), pot stand, and flue, was a cooking system that not merely boiled but also steamed food using a pot and a steamer. The diversification of cooking methods identified from this cooking system made it possible to eat food using more diverse ingredients, which seems to have had a positive effect on the people’s nutritional status at that time.
It is understood that cooking and food storage containers were naturally located around cooking fireplaces, and the cooking space in dwellings was formed around cooking fireplaces. In addition, a flue added to the cooking fireplace let the heat generated during cooking stay in a house for a while so that it can also serve as heating in cold winter.
These cooking fireplaces were made of clay structures during the Mahan period, but from the period that was influenced by Baekje, stone was used to build cooking fireplaces, or bedrock was excavated to install the both walls of furnaces and smoke exhaustion facilities. In particular, it is characteristic that the flue, which had been installed on the inner wall of the dwelling for the purpose of smoke exhaustion, was placed outside the dwelling, and earthenware (fireplace rim) attached to the fireplace also newly appeared.
In the dwellings where these changes occurred, not only changes in the detailed shape and tanal(paddling/beating technique) of egg-shaped pottery or steamers used as a pot, but also the representative pottery types of Baekje, such as Gaebae, Gobae, and Samjok, were found. This suggests that the cooking space of Mahan society was transformed and developed in relationships with Baekje.
