‘비빔밥’의 진화와 담론 연구 (A Study on Evolution and Discourse of BIBIMBAB)

초록

이 글은 비빔밥의 진화과정과 그 과정에 발생한 담론에 대한 분석을 목표로 마련되었다. 이 연구에서 확인한 점은 비빔밥을 비롯한 오늘날 한국음식의 진화과정을 살필 때 19세기에서 20세기로 전환되는 과정에 대해 주목할 필요성이다. 적어도 전근대적 사회 시스템 아래에서 조선사회는 외식업이 중국이나 일본에 비해서 발달하지 못했다. 이로 인해서 가정식 비빔밥이 주류를 이루었고, 그에 대한 기록도 존재하지 않았다.
그런데 1920년대 이후 서울을 비롯한 지방에서 근대적 도시가 형성되어 인구의 집중과 경제의 중심지가 되면서 근대적인 외식업이 본격적으로 가동되었다. 이 과정에서 비빔밥은 밥과 재료를 미리 비벼서 그릇에 담는 음식에서 흰밥 위에 재료를 올려서 손님이 비벼 먹는 음식으로 진화되었다. 더욱이 1920년대 이후 지방 도시에서 운영되기 시작한 우시장은 쇠고기의 소비를 증대시켰다. 그 결과 진주에서는 쇠고기의 육회를 비빔밥에 올리는 새로운 조리법이 등장하였다. 그것이 고추장을 비빔밥 양념으로 자리 잡게 해주었다. 결국 비빔밥의 진화과정에는 20세기 초반 도시민 생활의 사회사적 변화가 개입했음을 확인할 수 있었다.
그 진화과정에는 비빔밥이 지닌 물질적 특성이 작용하였다. 한국인의 일상식사를 구성하는 <밥+국+반찬>의 구조가 <밥+반찬>의 조합으로 비빔밥을 만들어냈다. 곧 비빔밥은 ‘먹기에 좋기’ 때문에 사람들 사이에서 선택되었다. 이 점은 20세기 이후 각 지역의 식당 메뉴로 비빔밥이 등장한 이유이기도 하다. 국밥과 함께 비빔밥은 공급자나 수요자가 끼니를 해결하면서 보다 편리하게 만들 수 있고, 먹을 수 있는 음식이었다.
1970년대부터 본격적으로 진행된 한국사회의 도시화도 비빔밥의 담론을 만들어내는 데 중요한 사건이었다. 농촌과 지방에 거주하던 사람들이 대거 서울과 그 주변으로 이주하기 시작한 1970년대에 서울에는 지역음식을 전문적으로 판매하는 식당들이 들어서기 시작했다. 특히 경제개발의 성공이 가져다준 혜택을 누리기 시작했던 1980년대 초반에 서울에는 지방에서 기반을 다진 식당들의 분점이 문을 열었다. 이미 1960년대부터 언론에 등장하기 시작한 전주비빔밥은 1980년대 초반부터 전국적인 음식으로 자리를 잡았다.
이 과정에서 전주를 원산지로 하는 비빔밥의 유래가 만들어졌다. 농업을 기반으로 하는 전주지역에서 농번기에 소비하는 음식으로 전주비빔밥이 탄생하였다는 주장과 동학혁명 때 혁명군 군사들이 빨리 밥을 먹기 위해서 개발되었다는 주장이 전주지역에서 상당한 설득력을 발휘했다. 하지만 1990년대 이후에는 전주비빔밥이 해외에도 알려지면서 궁중음식이었다는 주장이 더욱 적극적으로 수용되었다. 1990년대 말부터 전주비빔밥이 일본을 비롯하여 해외로 진출하면서 비빔밥의 영양학적 우수성이 또 다른 담론으로 유행을 하였다. 여기에 1990년대 후반 전주가 광주에 밀리는 정치적 상황에서 갈등을 해소시키는 전주시민 혹은 전북도민을 상징하는 용어로 ‘전주비빔밥 정신’이란 담론이 전개되었다.

영어초록

This paper is arranged to analyze an evolution process of BIBIMBAB and the discourse which has been derived from the process. I can check from this study we should notice the transition from 19th to 20th century when we study an evolution process of Korean food including BIBIMBAB. The food service industry in Joseon Dynasty had not developed compared with China or Japan at least under the premodern social system. So home-style BIBIMBAB had become the mainstream. It was prepared to mix cooked rice with several ingredients in advance and then put them in a bowl.
But modern cities have been formed in Korea from the end of 19th century. These cities serving as center of economy with the population concentration, the food service industry has growed. And BIBIMBAB which one could make do with came on the menu of restaurants. But their BIBIMBAB should be different from home-style BIBIMBAB in terms of recipe because cooked rice lost much of its taste if mixed beforehand. So this way of BIBIMBAB - after the chef serves to put warm white rice in a bowl and top with ingredients, the customer mixes them personally - was created. Moreover consumption of beef has increased because of cattle markets which became to be run in the provincial cities since 1920s. As a result, new recipe to put Yukhoe(sliced beef) into BIBIMBAB showed up in Jinju. That caused Gochujang(chili pepper paste) to take up BIBIMBAB’s sauce. Finally I can confirm the evolution process of BIBIMBAB has to do with the socio-historical changes of urbanites’ life in the early of the 20th century.
In the evolution process, material characteristics of BIBIMBAB has been worked. The structure of <cooked rice+soup+side dish> consisted of korean daily-food created BIBIMBAB and this completed combination of cooked rice and soup. Namely, people selected BIBIMBAB as it was ‘good to eat’. This is the reason why BIBIMBAB has came on the menu of restaurants in each province since 20th century. BIBIMBAB including GUKBAB was a kind of fast food that the supplier could serve simply and the consumer could have fast.
Urbanization of Korean society has proceeded since 1970s had the effect of forming a discourse of BIBIMBAB. In Seoul restaurants to sell local foods professionally became to show up in 1970s when localite got to move to Seoul and the suburbs. Some restaurants at local areas opened branch of Seoul. Jeonju BIBIMBAB restaurants has been already appearance on the media since 1960s took its place as national food from the early 1980s.
The origin of BIBIMBAB which is native to Jeonju was fomed in this course. At first two following discourses were persuasive in Jeonju. One was the argument that BIBIMBAB was produced to eat in the busy farming season in Jeonju which was based upon the agriculture. And the other was the argument that the soldiers created BIBIMBAB to have meals fast in the Donghak Revolution. However, as Jeonju BIBIMBAB became known abroad from 1990s, an argument that BIBIMBAB had been one of Korean royal cuisine was accepted more actively. And a discourse that BIBIMBAB is superior nutritionally was in fashion, as BIBIMBAB went abroad including Japan from the late 1990s. At the same time, another discourse of ‘the Mind of Jeonju BIBIMBAB’ was developed as the term symbolizing a citizen of Jeonju or an inhabitant of the Jeollabuk-do to disentangle a complicated matter in the political situation that Jeonju has been falling behind Gwangju since the late 1990s.
