『음식디미방』음식명에 병기된 ‘맛질방문’의 정체 재검토 (Review of the Meaning of ‘matjilbangmun’ Written beside the Names of Dishes in Eumsikdimibang, the Old Korean Cookbook)

초록

장계향이 저술한 17세기 한글 조리서 『음식디미방』의 음식명 뒤에 병기된 17항의‘맛질방문’이 무슨 뜻인지에 대해 검토하고 재해석하고자 하였다. 지금까지 ‘맛질’에 대해서는 지명이라는 전제에서 논의되었다. 그런데 『음식디미방』에 ‘주국방문’이라는 편명이 있으므로, 이 ‘방문’의 용례를 보면 ‘맛질’은 지명이 되기 어렵다.
그럼에도 맛질이 지명일 가능성이 없는지에 대해서도 검토하였다. 장계향이 오래 살았던 영덕군과 영양군에는 맛질이라는 지명이 없다. 지금까지 거론되어왔던 예천군 맛질, 봉화군 맛질, 성주군 맛질, 이번에 추가로 검토한 안동시 미도(味道)라는 지명은 장계향의 생애와 밀접하게 연결되지 않는다. 따라서 맛질방문의 맛질은 지명이 아니다.
『음식디미방』 편명에‘주국방문’이라 표기하고 있다는 사실을 중요하게 생각하고, ‘약방문’, ‘사후약방문’ 같은 표현에서, 그리고 조선후기 조리서 가운데 『주방문』, 『역주방문』, 『음식방문』 등의 서명 표현에서 방문이라는 뜻을 알 수 있다. 방문이라는 말은 ‘방법[方]에 대한 기록[文]’이라는 뜻이고, 방문 앞에 오는 단어는 방문의 대상이다. 그렇다면 ‘맛질’은 ‘맛있는 음식 만들기’ 혹은 ‘음식 맛있게 만들기’와 같은 행위개념으로 보인다.
『음식디미방』에 수록된 17항의 ‘맛질방문’ 음식은 모두 원문 편명으로 어륙류에 배치되어 있고, 실제 조리법의 내용을 분석한 결과 접빈음식이나 잔치음식의 성격에 더 부합되는 것이 아닐까 한다. 맛질방문 음식을 실제 내용으로 재분류하면 어륙류 8항, 면류 4항, 조과류 5항이다. 맛질방문 17항 가운데서 8항의 음식이 그 이전 조리서에 등장하지 않았고, 9항 음식의 경우 그 이전 조리서에 등장했더라도 종전과 다른 점이 있기 때문이다. 따라서 맛질방문에 대해 ‘맛있는 음식 만드는 방법에 대한 기록’ 혹은‘음식 맛있게 만드는 방법에 대한 기록’이라는 의미로 판단할 수 있다는 가설을 제출하고자 한다.
맛질방문 조리법 중에서 면류(별착면법, 차면법, 세면법)와 약과법, 중배끼는 다량의 밀가루로 만드는 음식이라는 점이 주목된다. 일반적으로 끈기가 없는 메밀이나 녹두가루로, 혹은 그런 재료에 소량의 밀가루를 섞어 면류를 만들었는데, 『음식디미방』 맛질방문에서 귀한 밀가루를 많이 써서 끈기 있고 부드러운 음식을 만들고 있기 때문이다. 그밖에 맛질방문이라 병기된 어류, 육류, 조과류 조리법에서도 맛질방문에 대해 음식을 맛있게 만드는 방법이라는 뜻으로 이해될 수 있다.

영어초록

The purpose of this research was to examine and reinterpret the meaning of the term ‘matjilbangmun.’ This word was written alongside the names of dishes in the old Korean recipe book, Eumsikdimibang, written in the Korean language by Jang Gye-hyang in the seventeenth century. When previous studies have discussed the term ‘matjil,’ the first part of the compound word ‘matjilbangmun,’ these discussions were usually based on the premise that ‘matjil’ is a place name. However, ‘matjil’ does not seem to be a place name because Eumsikdimibang has a chapter titled ‘Jugukbangmun.’ This chapter is about how to make Korean traditional rice wine and its fermentation starter, nuruk. In addition, Jang Gye-hyang lived for many years in three different regions, Andong-si, Yeongdeok-gun, and Yeongyang-gun in Gyeongsangbuk-do where no such place by the name of ‘matjil’ exists. While there are some places named Yecheon-gun Matjil, Bonghwa-gun Matjil, and Seongju-gun Matjil, these areas are not directly relevant to Jang Gye-hyang. Therefore, the term ‘matjil’ cannot be regarded as a place name.
In addition to the chapter titled Jugukbangmun in Eumsikdimibang, there are other Korean expressions which includes ‘bangmun,’ the second part of the term ‘matjilbangmun.’ For example, there are expressions like “sahu-yakbangmun (literally meaning ‘seeking medicine after death’)” and “yakbangmun (a prescription).” Furthermore, there are old recipe books authored in the late Joseon Dynasty like Jubangmun, Yeokjubangmun, and Eumsikbangmun. In these cookbooks, ‘bangmun’ means ‘a record (mun) of how to make something (bang),’ and the word which comes before ‘bangmun’ shows a type of dish to make. In this sense, ‘matjil’ can be understood as the concept of a cooking action that expresses the meaning of ‘making delicious food’ or ‘making food delicious.’ There were seventeen types of matjilbangmun foods introduced in the chapter regarding fish and meat dishes in Eumsikdimibang. This research analyzed the recipes of these seventeen matjilbangmun foods. In doing so, some distinctive characteristics were found. Firstly, the dishes marked as ‘matjilbangmun’ were more likely to be prepared for meals for guests and for festive occasions. These dishes were reclassified according to food content, and it was confirmed that there were eight types of fish and meat dishes, four kinds of noodles, and five sorts of traditional Korean confections, hangwa. These foods traditionally tended to be prepared and consumed on special occasions. In addition, eight types of these matjilbangmun dishes were not shown in other old recipe books that had been written before Eumsikdimibang. Even if the same or similar types of dishes existed in these other books, they were totally different from Eumsikdimibang’s matjilbangmun recipes. The results would suggest that the meaning of the term ‘matjilbangmun’ can be interpreted as ‘a record on how to make delicious food’ or ‘a record on how to make food delicious’.
For the recipes of matjilbangmun dishes, in particular, noodles, yakgwa, and Jungbaekki seem to have been considered gourmet foods because they used a large amount of wheat flour. This can make such dishes stickier and softer. Before Eumsikdimibang was authored, noodles had been commonly made of non-sticky buckwheat or mung bean powders themselves or by mixing these powders with a small amount of wheat flour.
