초록

This study aims to offer an analytical framework for value chain approach to the analysis of agro-food industry. It combines the concept of product differentiation and the vertical coordination perspective to clarify the value chain concept. Based on this conceptualization, it builds an analytical framework for the value chain approach to be operationalized. The framework is composed of three analytical elements, end-users’ consumption behavior, add-value process, and transactions attributes. The first analytical element sheds light on the increasing heterogeneity of end-users’ consumption function and the changing nature of decision rights on the choice of a particular food item. The second element evaluates the technological and managerial specialization of each stages in the value chain, which might be a necessary condition for chain participants’ incentives to develop quality differentiation. The last element underscores the informational and incentive implications of the attributes of transactions for differentiated products.
Based on the analytical framework, the paper conducts a case study of the red pepper value chain to illustrate its effectiveness. The analytical results reveal the increasing difficulties of measuring the quality of powdered red pepper and the structural abatement of consumers’ decision rights over the quality, which result mainly from the shift in consumers’ purchase from powdered red pepper to further processed items, including Gimchi and hot pepper paste. Finally, the paper discusses the policy implications of the results.
