How does gelatin contribute to gel formation?
The long, thin protein strands of the gelatin give it its unique ability to gel. The gelation protein molecules, each surrounded by water molecules, slowly start to form a network by creating cross-link(bonds or bridges) among themselves. The water remains trapped within the protein strands, creating an elastic solid.
Thermoset(Irreversible) Gels vs Thermoplastic(Reversible) Gels
Most thermoset gels are the result of protein unfolding and denaturation followed by aggregation of the molecules into a cross-linked network. This network is generally formed via non-covalent bonds, such as hydrophobic interaction and hydrogen bonds.
The most extensively studied protein of themoplastic gel is gelatin, that assume random coil configurations. Heating a gelation gel will cause the hydrogen bonds in a junction zone to dissociate and the matrix/gel melt. Upon cooling, the gel will reform
