식빵(white pan bread)은 틀에 넣고 굽는 빵을 총칭하며 산형 식빵, 샌드위치 식빵 등이 여기에 속한다(1). 식빵을 만드는 방법 중 직접 반죽법은 모든 원료를 한꺼번에 혼합하는 1단계 공정으로서 반죽이 최적의 점탄성(optimum consistency)을 가질 때까지 혼합하는 방법이다. 혼합 시간은 밀가루의 종류, 제품의 종류, 혼합기의 형태에 따라 달라지나, 혼합시간은 대략 15~25분 정도이다. 반죽의 온도는 보통 24℃~28℃정도로서 약 3시간 정도를 발효한다(1).근래 우리나라에서는 식생활이 서구화되어 가면서 빵류의 소비가 급격히 증가하고 있는 추세이다. 그러 나 우리 기호에 맞는 빵, 특히 우수한 기능을 가진 우리농산물을 이용한 빵에 대하여는 인구가 매우 미진 한 형편이다. 우리 농산물 중에서 녹차는 맛, 향기, 색 깔 등이 뛰어날 뿐만 아니라 화학적인 성분(2)(3)과 우수 한 약리효능이 밝혀지면서 많은 관심을 갖게 되었다. 녹차의 성분으로는 생리활성을 갖는 폴리페놀(10~ 13%)외에 각종 비타민과 무기질 등이 매우 다양하다.
