Introduction
Today, various fermented foods such as yogurt, wine, and Kimchi produced using microorganisms such as bacteria, yeast, and fungi are consumed all over the world. Culturing bacterial or fungal strains to help start this fermentation process is called starter culture (Elhadi & Adam, 2022). Starter culture is used to make the flavour or texture of fermented food in a way that consumers prefer (Elhadi & Adam, 2022). Traditionally, the back-sloping technique of inoculating part of the finished product with starter was mainly used in the small fermentation process..

Introduction
오늘날, 세계 곳곳에서는 박테리아, 효모, 곰팡이와 같은 미생물을 이용하여 생산된 요거트, 와인, 김치 등과 같은 다양한 발효식품이 소비되고 있다. 이러한 발효 과정의 시작에 도움이 되는 bacterial 혹은 fungal strains 를 배양하는 것을 starter culture 라고 한다. Starter culture 는 발효 식품의 풍미나 질감 등을 소비자가 선호하는 방식으로 만들기 위하여 사용된다. 전통적으로, 소규모의 발효 과정에서는 완제품의 일부를 starter 로 하여 접종하는 back-slopping 기법이 주로 사용되었으나, 현대의 발효 산업에서는 batch 등을 이용하여 starter 의 양을 대량으로 늘린 후 접종하는 방법이 사용되고 있다.
