자돈사료에 있어서 산제의 사용은 이유자돈의 사양성적을 개선시키면서 항생제 대체 효과도 가지고 있다. 산제는 일반적으로 장내의 pH를 낮춰줌으로써 단백질 소화효소의 활성을 증가시키고, 자돈의 설사를 유발하는 병원성 미생물의 성장을 억제한다. 산제는 이러한 효과에 관계된 많은 가설을 가지고 있는데, 이는 pH 감소, 병원성 bacteria의 감소, GI tract에서 energy source로의 이용, gastric emptying rate의 감소, endogeneous enzyme의 분비와 장 morphology 개선, minerals의 chelation, Intermediary metabolism 자극 효과, digestibility and retention of nutrients 의 개선효과이다. 그러나 이 작용에 대해서는 아직 의문점이 많이 남아있다. 유기산의 경우에는 몇십년 전부터 계속 사용되어 왔는데, 종류로는 Fumaric acid, Citric acid, Formic acid, Lactic acid 등이 있으며, 많은 연구자들이 실험을 통해 이유 자돈의 성적 향상과, 건강도 증진효과에 대한 증명을 하였다. 최근에는 무기산도 연구가 되고 있는데 유기산과 효과는 비슷하지만 가격은 싸기 때문이다. 또한 염 형태의 산제 급여에 대한 연구도 이루어지고 있다. 그러나 일관되지 못한 연구결과와 급여 적정량에 대한 연구부족은 아직도 다양한 연구가 시도되고 보고되어야 할 이유가 될 것이다.
