현재 사회구조의 바쁜 현대인의 생활과 식습관 등의 변화로 밥과 국을 기본으로 하는 한국의 식생활에서 서구화된 식생활으로 빵이나 간단한 간식류 등의 보편화와 외식의 증가와 더불어 쉽고 빠른 섭취가 가능한 가공 식품 소비의 증가를 가져왔다. 이러한 식생활의 변화와 더불어 식품 가공기술의 발달, 현대인의 요구에 의해 즉석가공식품, 동결건조식품 등 편리성과 기능성을 갖춘 가공식품 종류도 다양해지고 있다. 그럼에 따라서 현대사회에서 개인의 소득이 증가하고 생활수준이 향상되면서 많은 사람들이 다양한 문화생활을 즐기고 있다. 그 중 음료류는 현대인들의 대표적인 기호음료이다.식품공전에 의하면 음료류는 다류, 커피, 과일・채소류음료, 탄산음료류, 두유류, 발효음료류, 홍삼・인삼음료 등 음용을 목적으로 하는 것을 말한다. 2017년 한국농수산식품유통공사 통계에 따르면 음료류에서 가장 큰 비중을 차지하고 있는 품목은 커피음료이며, 이어서 탄산음료, 과채음료 순으로 나타났다. 이러한 다양한 음료류는 전의 소비자의 기호도와 소비시장의 특성이 달라졌다. 커피의 경우에는 가성비 중심의 커피로 큰 사이즈에 값이 싼 가성비 제품과 콜드블루 등 다양한 커피가 나타나졌고, 탄산음료의 경우 탄산의 강도를 높인 음료 및 에너지드링크에 대비되어 탄산 숙면 음료가 등장하게 되었다.
커피(Coffee)는 세계적으로 가장 많이 음용되는 기호성 음료이다. 견과 종실류로써의 커피원두를 사용하여 원료의 품질을 유지하면서 소비자에게 판매할 목적으로 식품 가공(Food processing)과정을 거쳐 커피라는 기호성 음료가 완성된다. 커피는 다양한 공정을 통해 선별된 원두를 로스팅 과정을 거친 뒤 물을 이용하여 추출하는 음료로, 식품공전 기준에 따르면 커피원두를 가공한 것이거나 또는 이에 식품 또는 식품 첨가물을 가한 것으로 규정되며 볶은커피, 인스턴트커피, 조제커피, 액상커피로 분류하고 있다. 국내 커피시장이 점차 확대되면서 바로 마시는 액상커피인 ready-to-drink (RTD) 커피가 성장하였다.
